2 cups mashed sweet potatoes
2 eggs, separated
1 (9 inch) unbaked pie crust
1/4 lb. butter, softened
1 cup packed brown sugar
1/2 tsp. ground ginger
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 cup evaporated milk
1/4 cup white sugar
1/4 tsp. salt
1. Preheat oven to 400 degrees. In a bowl, add the sweet potatoes, butter, egg yolks, brown sugar, salt, ginger, cinnamon, nutmeg and evaporated milk. Mix thoroughly.
2. Whisk egg whites until stiff peaks form; add 1/4 cup sugar and mix into sweet potato mixture.
3. Pour mixture into pie shell and bake at 400 degrees for 10 minutes. Reduce heat and bake at 350 degrees for 30 minutes or until firm.
