1 1/2 cups cooked & pureed sweet potatoes
1/4 cup heavy whipping cream
3/4 cup brown sugar
1/4 cup honey
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla
pinch of salt
4 t. butter
2 large eggs

1. Preheat oven to 300°F. Put pie crust inside oven safe pie pan, gently pressing against the sides until crust is secure. Set aside.
2. In a large mixing bowl, use an electric mixer to stir all ingredients together until completely smooth and thoroughly mixed. Pour into pie crust.
3. Pour mixture into pie crust. Sprinkle with sugar on top. Let sit for 10 mins to allow the sugar to melt and mix with the filling. Bake for 1 hour. Allow to cool.
