Ingredients:
3 large eggs
2 t. diced celery
1 green onion, finely chopped
1 t. dill pickle or sweet pickle relish
2 t. mayo
1/4 tsp. mustard powder
1/8 tsp. dill weed
good pinch of sweet paprika
salt and pepper to taste
Directions:
- 1. Place the eggs in a pot and cover with water. Bring them to a boil, cover with a lid and turn off the heat. Let them sit for 20 minutes, drain the water and add cold water to the pot. Allow to sit for 5 minutes and then peel them.
- 2. Place the peeled eggs in a bowl and mash them with a fork till they are good and broken up. Add in the remaining ingredients and stir to mix well. Serve on your favorite sandwich bread with lettuce.
