Ingredients:
6 large eggs
8 organic cherry tomatoes, quartered
1/4 onion, cut fine
handful of chopped spinach
1 big slice of bacon, excess fat removed
4 chopped mushrooms
1/4 capsicum cut fine
cracked salt
pepper
Directions:
- 1. Preheat oven to 350 degrees F / 177 degrees C / Gas 4 Moderate. Brown the onions and bacon in a frying pan.
- 2. Whisk eggs and add all ingredients to the same bowl. Divide egg mix into 6-8 muffin cups (depending how deep you trays are)
- 3. Place muffin cups in the oven and cook for 20 minutes. Serve immediately. Serve with salad and enjoy. Store in fridge or freezer.
