250 ml (140 g) Snowflake cake wheat flour (base)
250 ml (100 g) grated Cheddar cheese (base)
125 g butter or margarine (base)
30 ml cooking oil (filling)
1 medium onion, coarsely chopped (filling)
1 clove garlic, crushed (filling)
50 g (about 10) peppadews®, coarsely chopped (filling)
50 g feta cheese, crumbled (filling)
2 extra-large eggs (filling)
200 ml milk (filling)
30 ml chopped fresh mixed herbs or 10 ml dried (filling)
salt and freshly ground black pepper to taste (filling)
1. Base: Combine flour, cheese and butter and mix to a soft dough (to mix in a food processor works well). Press dough onto base and sides of a greased 24 cm ovenproof tart or quich dish.
2. Filling: Heat oil in a medium, heavy-based frying pan. Add onion and garlic and sauté for a few minutes until soft. Remove from heat and leave to cool slightly.
3. Spoon onion mixture onto pastry base, then layer with peppadews® and feta cheese.
4. Whisk eggs, milk, herbs and seasoning together. Pour over filling. Bake in a preheated oven at 160 °C for about 40 minutes, or until set and light brown.
5. Substitute peppadews® or feta with any other ingredients, such as 125 g button mushrooms, chopped or 125 g rindless streaky bacon, chopped.
