Ingredients:

8 eggs

1/3 cup milk

200g diced bacon

2 thin sliced shallots

1/2 fine diced red capsicum

4 small mushrooms diced fine

1 small red onion diced fine

salt and pepper to taste

Directions:

1. Vegetables can be substituted to suit taste or what you have on hand. Whisk eggs and milk together, add all other ingredients, line slow cooker with baking paper, pour mix into slow cooker and place tea towel under the lid.

2. Cook on low 1 to 2 hours, until quiche is set. Depending on how thick your’s is, using tea towel trick under lid. Remove using paper to lift out and slice into squares. Great for school lunches and quick meal on the run.
