Italian sausage
medium onion diced
few garlic cloves
fresh thyme or rosemary
salt and pepper
sherry or white wine (3/4 c or so)
a can of petite diced tomatoes
a couple diced carrots
5 cups of chicken broth
chicken broth
1/3 cup flour
cooked pasta (1/2 pound or so)
some chopped spinach
1. Remove Italian sausage from casing and sauté in a heavy bottom pot. Add a medium onion diced. Sauté until soft.
2. Add a few garlic cloves and fresh thyme or rosemary, salt and pepper. Once brown deglaze with sherry or white wine (3/4 c or so). Scrape up the bottom.
3. Add a can of petite diced tomatoes, a couple diced carrots and 5 cups of chicken broth. Cook on a simmer until sausage is tender. At least 30-45 min. Mix a cup of chicken broth with 1/3 cup flour. Add to soup and boil until thickened. Skim off any oil and taste for seasoning. Add cooked pasta (1/2 pound or so) and some chopped spinach.
