Ingredients:

2 lbs fish fillets, fresh or frozen, thawed

2 tablespoons butter

½ c tablespoon chopped onion

2 c chopped carrot

½ c chopped celery

½ c flour

1 tablespoon salt, optional

Dash paprika

40 oz chicken broth

6 c milk

2 c grated processed cheese

Directions:

1. Cut fish into cubes, set aside.

2. Melt butter in large sauce pan; add onion, carrot and celery. Cook until onion is transparent.

3. Blend in flour, salt and paprika. Cook 1 min.

4. Gradually add chicken broth and milk. Cook, until thickened. Add fish; simmer until fish is done. Add cheese, melt.
