12 c water
4 med potatoes, peel & chop
2 c chopped onions
5 tablespoons dried basil, crushed
5 tablespoons instant chicken bouillon granules
1 tablespoon pepper
3 c fresh or frozen broccoli or cauliflower
2 c chopped fully cooked ham
2 c light cream or half & half
1 tablespoon butter
grated Parmesan cheese
1. In a large saucepan combine water, potatoes, onion, basil, bouillon granules and pepper. Bring to a boil; reduce heat.
2. Cover and simmer 15 min, until potatoes are tender.
3. Remove from heat. Do not drain. Stir in broccoli. Return to a boil. Reduce heat; cover and simmer 8-10 min or until broccoli is tender.
4. Stir in chopped ham, light cream or half & half and butter. Cook and stir until heated thru. To serve, ladle into soup bowls. Sprinkle each serving with Parmesan cheese.
