half a leg of lamb
1 tsp cayenne pepper
1 tsp ground black pepper
1 tbsp paprika
1 beef stock pot or cube
1 tbsp ground ginger
1 tbsp turmeric
2 tsp ground cinnamon
1 large onion finely chopped
3 garlic cloves finely chopped
4oz dried apricots cut in half
2 oz dates cut in half
2 oz sultanas or raisins
3oz flaked almonds
1tsp saffron soaked in small amount cold water
1-2 tbsp honey
2 tbsp coriander roughly chopped
2 tbsp parsley roughly chopped
1 can peaches drained of juices and liquidize the fruit (only use the fruit)
1. Mix well all the ingredients together in a bowl then put half in the bottom of the Slow cooker.
2. Put in the leg of lamb and then out the rest of the mixture on top of the lamb.
3. Cook on LOW for 7-8 hours halfway through cooking baste the lamb with the juices/sauce to get as much flavour into the lamb as possible
