Ingredients
- 2 tablespoons butter, melted
- ½ cup pecans, chopped
- ⅓ cup packed brown sugar
- ¼ cup corn syrup
- 2 eggs
- ⅛ teaspoon salt
- ½ teaspoon vanilla extract
- 1 sheet ready-made pie dough or pastry
Directions
- Preheat the oven to 350°F (175°C).
- In a nonstick pan, combine the melted butter, pecans, brown sugar, corn syrup, eggs, salt and vanilla. Cook over medium-low heat, stirring, just until the filling thickens slightly. Remove from the heat.
- Roll out the pastry and cut into 2- to 3-inch circles. Arrange on a parchment-lined baking sheet and turn up the edges slightly.
- Spoon about 1 tablespoon of pecan filling onto each circle, adjusting for its size. Bake for 8–10 minutes, until the filling is set and the pastry is golden. Cool on a wire rack before serving.
Tip
Keep the oven closed for the first two-thirds of baking and test doneness with a wooden skewer.
