Ingredients:

5 zucchinis

1 tablespoon olive oil

1 small onion

8 ounces fresh mushrooms

2 cloves garlic

salt and ground black pepper to taste

8 oz. crumbled feta cheese

4 oz. grated Parmesan cheese, or to taste

Directions:

1. Preheat oven to 350 degrees F (175 degrees C).

2. The onion, mushrooms and garlic were all shredded together, Zucchini was also shredded separate

3. Heat olive oil in a 10inch skillet over medium heat. Cook and stir onion, mushrooms, and garlic in hot oil until the onion is tender, 5 to 7 minutes season with salt and pepper.

4. Stir shredded zucchini into the onion mixture cook and stir until hot, about 5 minutes. For accent taste a Marsala cooking wine was poured into mix. Spoon mixture into the baking dish top with feta cheese and Parmesan cheese.

5. Bake in preheated oven until the cheese begin to brown, 30 to 40 minutes.
