500 grms of non-roasted coarse semolina
1 cup of plain flour, approx. 200grms
250 grms of unsalted butter
150 grms ghee (clarified butter)
2 cups of granulated sugar approx. 400grms
8 eggs
1/2 cups of milk powder
2 tea spoons of baking powder
2 table spoons of freshly ground cardamom powder
pinch of yellow food coloring
1/4 cups of liquid milk (to loosen batter)
sesame seeds for garnish
1. Cream ghee, unsalted butter and sugar, once creamy add eggs one at a time. This step is very important, making sure each egg is very well combined to creamy before adding the next egg. Add in the yellow food coloring and mix.
2. Add all the dry ingredients, semolina, flour, cardamom powder, milk powder and baking powder. Mix until well combined. Add in the 1/4 cups of liquid milk and with spatula to loosen batter.
3. Pour the batter into a well-greased cake tin and add the sesame seeds on top, bake in a 180c preheated oven for 45 to 1hour or until completely baked. Remove from oven and let cool completely before demolding. Slice into squares and serve.
