3/4 cups condensed Milk (approx. 275grms)
4 eggs
3/4 cups of oil. (sunflower or veg)
1 1/2 cups of plain flour
2 teaspoons of baking powder
4 tablespoons of milk powder
2 tablespoons of vanilla extract or any flavor of your choice
1. Add eggs in a big bowl and mix with an electric mixer on high for 5 mins until frothy and foamy. This step is very important otherwise the cake will be dense and taste eggy.
2. Add the oil and vanilla extract. Mix for another 2 mins. Add the condensed milk and mix for another 2 min.
3. Sieve flour, baking powder and milk powder together and add in the wet mixture. Mix on low until well combined.
4. Pour batter in a well-greased and floured 12" cake ring and bake for 45 mins in a 170c preheated oven. Or until skewer came clean. Because this is a Condensed milk cake, the top will burn quickly in the oven. Once you add the cake in the oven, add a sheet of foil paper on top (do not press the sheet on the cake), this will prevent the cake from over burning. Once the cake is baked, remove the foil and let it for another 3 to 5 mins max for the cake to color on top. Let cool completely. Drizzle the cake with condensed milk and garnish with pistachios.
