Ingredients:

3 cups water

1 cup whole milk

1 cup steel cut (quick and easy) irish oatmeal

1/2 teaspoon kosher salt

1 cup shredded carrots

1/3 cup raisins

8 ounce can crushed pineapple, undrained

2 teaspoons cinnamon

1/3 cup brown sugar

sweetened coconut flakes, for serving

chopped candied pecans, for serving

half and half, for serving

Directions:

1. In a medium pot, bring the water and milk to a boil. Add oats, salt, carrots, and raisins; reduce heat and simmer, uncovered, for about 6-7 minutes, stirring frequently.

2. Remove from heat and stir in the pineapple, cinnamon, and brown sugar.

3. Divide among 6 bowls; top with a sprinkle of sweetened coconut and chopped pecans, and a drizzle of half and half.
