1 1/2 c boiling water
1 c quick cooking oats
1/2 c oil
1 1/2 c flour
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1 c brown sugar
1 c white sugar
2 eggs
1 stick or 1/2 c butter (topping)
1 c brown sugar (topping)
1/2 c milk (evaporated milk works fine too) (topping)
1/2 c chopped pecans (topping)
1 tsp vanilla (topping)
1 c coconut (topping)
1. Preheat oven to 350 degrees. Pour boiling water over oats and let stand while preparing the rest. sift together flour, cinnamon, salt and soda. Mix together sugars, eggs and oil. Mix sifted ingredients in with the oatmeal and mix well.
2. Pour in 13x9 cake pan. Bake for 30 to 35 minutes till toothpick poked near the center comes out clean.
3. While the cake is baking, make the topping. In a medium sauce pan over med high heat add milk, sugar and butter. Stir constantly until mixture boils and becomes thick. (about 5 minutes after boiling. You want a syrup) Remove from heat. Add vanilla, nuts and coconut. After you remove cake from oven, Pour the topping over the cake while its hot. Put under broiler for two minutes if you want to toast the coconut but you don't have too. Let cool or serve warm.
