Easy Crispy Fried Chicken Sandwiches

Ingredients:

2 boneless, skinless chicken thighs (or breasts)

1/2 cup milk

2 tsp vinegar

1/2 cup all-purpose flour

1/4 tsp garlic powder

1/4 tsp smoked paprika

1/8 tsp cayenne pepper

2 tsp salt

1/4 tsp freshly ground black pepper

cooking oil, for frying

2 hamburger buns or sandwich rolls (to serve)

lettuce (leaf or shredded) (to serve)

sliced dill pickles (to serve)

mayonnaise (to serve)

Directions:

  1. 1. For the chicken. Mix together the milk and vinegar. This makes homemade buttermilk.
  2. 2. In a large plastic bag, combine the chicken thighs and buttermilk. Seal the bag and refrigerate for at least 1 hour.
  3. 3. Meanwhile, in a shallow bowl, whisk together the flour, garlic powder, smoked paprika, cayenne pepper, salt and black pepper.
  4. 4. Add the cooking oil to an electric skillet until it’s about 1 inch deep and pre-heat to 350 degrees F (180 C). Let some of the buttermilk drip off of the chicken and then coat it in the flour mixture. Make sure it is very well coated on both sides.
  5. 5. Carefully add the chicken to the hot oil and cook for about 3 5 minutes per side, until golden brown and chicken is cooked through.
  6. 6. Remove the chicken to a wire rack to drain.
  7. 7. To serve: Layer the buns or sandwich rolls with the lettuce, fried chicken, sliced dill pickles, and mayo. Serve warm.
