Ingredients:
2 boneless, skinless chicken thighs (or breasts)
1/2 cup milk
2 tsp vinegar
1/2 cup all-purpose flour
1/4 tsp garlic powder
1/4 tsp smoked paprika
1/8 tsp cayenne pepper
2 tsp salt
1/4 tsp freshly ground black pepper
cooking oil, for frying
2 hamburger buns or sandwich rolls (to serve)
lettuce (leaf or shredded) (to serve)
sliced dill pickles (to serve)
mayonnaise (to serve)
Directions:
- 1. For the chicken. Mix together the milk and vinegar. This makes homemade buttermilk.
- 2. In a large plastic bag, combine the chicken thighs and buttermilk. Seal the bag and refrigerate for at least 1 hour.
- 3. Meanwhile, in a shallow bowl, whisk together the flour, garlic powder, smoked paprika, cayenne pepper, salt and black pepper.
- 4. Add the cooking oil to an electric skillet until it’s about 1 inch deep and pre-heat to 350 degrees F (180 C). Let some of the buttermilk drip off of the chicken and then coat it in the flour mixture. Make sure it is very well coated on both sides.
- 5. Carefully add the chicken to the hot oil and cook for about 3 5 minutes per side, until golden brown and chicken is cooked through.
- 6. Remove the chicken to a wire rack to drain.
- 7. To serve: Layer the buns or sandwich rolls with the lettuce, fried chicken, sliced dill pickles, and mayo. Serve warm.
