4 pork chops, 3/4" thick
1 tsp. vegetable oil
2 tbsp. brown sugar
salt and pepper
1/8 tsp. (a pinch) ground cinnamon
1/8 tsp. ground nutmeg
2 tbsp. butter
2 tart apples, peeled, cored and sliced
3 tbsp. broken pecans
1. Preheat oven to 200F (warm). Place medium baking dish in oven to warm. Heat large skillet over med-high heat. Brush chops with oil, sprinkle with salt and pepper and cook in hot pan 3 to 4 minutes per side, until done.
2. Transfer to warm dish and return to oven. In small bowl, combine brown sugar, cinnamon and nutmeg. Add butter to skillet and stir in sugar mixture and sliced apples. Cover and cook until apples are just tender. With slotted spoon place apples on top of chops and return to oven. Add pecans to sauce in pan and cook until slightly thickened. Spoon over chops and apples. Serve with mashed white or sweet potatoes and buttered green beans.
