Healthy PB Cookies

Ingredients:

1/2 cup natural peanut butter

1/4 cup granulated monk fruit (you can also try stevia to keep it sugar-free, or use cane or coconut sugar)

1 egg

1/4 tsp vanilla extract

1 tbsp arrowroot starch/flour

1/4 tsp baking soda

Directions:

  1. 1. Whisk granulated monk fruit & peanut butter, stir in the rest of the ingredients until smooth.
  2. 2. Roll into balls (makes 9, will be a heaping tbsp each) and place on parchment paper on baking sheet. Press down with a fork on each to make a mark and flatten. Fix edges if needed. 3. Bake at 350F for 10 min. Sprinkle with sea salt & let cool completely.
