Roasted Carrots with Goat Cheese

Ingredients:

2 bags of carrots

olive oil

1/2 teaspoon salt

1/2 teaspoon pepper

1 teaspoon garlic powder

1/2 teaspoon paprika

goat cheese

parsley

Directions:

1. Pre-heat your oven to 400.

2. Peel and slice your carrots.

3. Toss carrots in olive oil and spices.

4. Arrange on a baking sheet covered in foil and greased.

5. Bake for 40-45 minutes or until a for goes through easily.

6. When cooked, remove from the oven and arrange on a serving dish.

7. Crumble your goat cheese (as much as you’d like) over the carrots and finish off with a sprinkle of parsley (dried or fresh).

8. Serve immediately.
