
Ingredients
- 6-8 medium sized potatoes peeled and diced
- 1 medium onion, diced
- 32 ounces chicken broth
- salt
- pepper
- 3 cans of evaporated milk
- 1/2 cup of butter
- 6 tbsps. flour
- 1 pint heavy whipping cream
- 1 lb. of bacon, cooked and diced
- shredded cheese
- diced green onions
- sour cream
Directions
- Place diced potatoes, onion and chicken broth in your crock pot. Add 2 Tbsps. salt and 2 Tbsps. pepper. If the chicken broth does not cover the potatoes and onions, add water to cover. 2. Cook on high 4 hours or on low for 6 hours. When potatoes are tender, move to the next step. (This step can of course be done on the stove top and cooked until potatoes are tender).
- Open the evaporated milk and place in a microwavable bowl. Heat approximately 6 minutes or until hot. Pour milk in crock pot with the broth, onions and potatoes. Turn crock pot on high and heat until almost a boil, stirring occasionally.
- Meanwhile, melt the stick of butter in a sauce pan. Add the flour and stir immediately and continue to stir and cook over medium heat for 2 minutes. Add the pint of whipping cream, stir and allow to thicken making a roux.
- Slowly incorporate the roux, with the ingredients in the crock pot, stirring the entire time until completely mixed in. Allow to continue to heat in the crock pot 20-30 minutes until soup has thickened.
- Once thickened to desired consistency, add in the crumbled bacon. Serve and use whatever garnishes you choose.
