2-3 boneless skinless chicken breast
1 pack taco seasoning
1 large onion
1 can of diced tomatos with chilis
2 cans of kernel corn
3 cups chicken broth
1 1/2 cup mexican blend cheese
1 large handful of cilantro chopped
2 table spoons of lime juice
tortillas
salt to taste
1. Cut onion to size preferred diced or larger pieces. Mix the taco seasoning with the chicken broth in a separate container until all seasoning is dissolved.
2. Place the frozen or thawed chicken breast into bottom of the crock pot.
3. Open the can of tomatoes and the two cans of corn into the crockpot without draining. Add the onion, Lime juice and the cilantro at this time as well. Pour the taco mix chicken broth over contents of the crockpot and mix all ingredients leaving the chicken on the bottom
4. Cook on low for 7 hours. Removes chicken at this time and shred to small pieces and add it back into the crock pot. Add Mexican cheese at this time and stir all ingredients together. Recover in crockpot and cook for another hour. Add tortillas to individual bowls while serving to prevent chips from getting soggy.
