Ingredients:

1 16-oz. pkg. pinto beans, sorted and washed

1 medium onion, coarsely chopped

3 slices bacon, cut into 1 pieces

2 tsp. sugar

2 tsp. salt

2 12-oz. cans beer

3 cups diced cooked ham or shredded cooked roast beef or brisket

1 tsp. chili powder

1 tsp. ground cumin

1/2 tsp. garlic powder

1 10-oz. can tomatoes with green chiles, with juice

toppings as desired: grated cheddar cheese, chopped fresh cilantro

sour cream

picante sauce or salsa

sliced green onions

Directions:

1. In heavy soup pot, render bacon over low heat. Add chopped onion and cook with bacon until clear. Add beans and water to cover by 1.

2. Add sugar, salt, beer, meat, chili powder, cumin, garlic powder, and RoTel tomatoes. Cover and reduce heat to simmer for 2 hours, checking for added water if needed.

3. When beans are soft and creamy, serve with toppings as desired.
