Slow Cooker Stuffed Pepper Soup

Ingredients:

1 lb. ground beef, browned

2 green peppers, seeded and chopped

2 red peppers, seeded and chopped

1 large sweet onion, chopped

1-2 shallots chopped

2-3 minced garlic cloves

1 tbsp. basil

1 tbsp. oregano

2 cans diced tomatoes

1 can tomato sauce

1 can beef broth

32 oz. of beef broth

1.5 c minute rice

Directions:

1. Place all ingredients except Minute Rice into slow cooker. Cook on low for 6-8 hours.

2. For the last 30 minutes of cooking add in rice, stir and close lid (30 minutes should be enough, but test the rice before serving). If Freezing.

3. Place all ingredients except Rice and 32 oz. of Beef broth into freezer bag. Freeze.

4. Thaw in fridge overnight and place in slow cooker in the am with the beef broth and follow above cooking directions.
