Slow Cooker Beef & Broccoli

Ingredients:

1 1/2 lbs flank steak, cut into thin strips

2 cups beef stock

3/4 cup low sodium soy sauce

2/3 cup brown sugar

2 tbsp. sesame oil

2 tbsp. garlic powder

2 tbsp. cornstarch

2 heads of broccoli (or 2 bags of frozen broccoli), cut into bite size pieces

serve with white or brown rice

Directions:

1. In a large slow cooker lay the strips of beef in the crockpot.

2. In a medium bowl combine beef stock, soy sauce, brown sugar, sesame oil & garlic powder.

3. Pour beef stock mixture over the beef and toss to combine.

4. Cook on low for 5-6 hours, or high for 2-3 hours, or until beef strips are just about cooked, but not overcooked where they shred.

5. With about 30 minutes left take 1/2 cup of the sauce from the crockpot and add in the cornstarch stirring to combine.

6. Add cornstarch mixture to the slow cooker and stir to combine.

7. Add in broccoli and gently combine.

8. Cook on high for and additional 30 minutes, or until sauce is thick and broccoli is cooked through.

9. If sauce gets too thick add in some additional beef stock or water a 1/4 cup at a time.

10. Serve over rice or on its own.
