Cajun Hen with Okra Stew

Ingredients:

1/2 onion, chopped

2 stalks celery, chopped

2 cloves garlic, chopped

1 zucchini, chopped

1 c frozen cut okra

1 cornish hen, quartered

1 t paprika

1 t thyme

2 t cajun seasoning

fresh chopped parsley

1/2 c water

Directions:

1. Cook 4 hours at all. Mix dry seasoning in a dish. Cut up chicken, if doing so, and season, reserving leftover seasoning while prepping vegetables.

2. After vegetables are chopped, place onion, celery and bell pepper in the pot. Top with zucchini and okra, then reserved seasoning and one chopped garlic, along with the water.

3. Lay hen on top of vegetables and add the remaining garlic and the parsley. This can be served with rice.
