Spicy Veggies with Tuna and Baked Eggs

Ingredients:

red, green & yellow peppers

mushrooms

potatoes (diced and blitzed in the microwave for 5 minutes first)

carrots peeled into ribbons (or grated)

half a courgette

frozen green beans, spinach and sweetcorn

tinned tomatoes

1 carton of passata

1 tin of tuna

half a teaspoon of coriander

1 teaspoon of onion granules

1 teaspoon of chili powder

2 teaspoons of paprika

2 teaspoons of mixed herbs

black pepper

2 cloves of crushed garlic

Directions:

1. Just throw everything into your Slow cooker and cook on high for approx. 3 hours.

2. Approx. 45 minutes to an hour before serving make some little wells in the mixture and crack an egg into each one.
