Ingredients:

1 or 2 small tomatoes

1½ medium avocados

1 small clove garlic

juice from ½ medium lemon

1 teaspoon extra-virgin olive oil

1/8 teaspoon sea salt

Directions:

1. Put all of the Ingredients: in a small bowl and gently stir to combine.

2. Season with more salt, if desired.

3. Cover and refrigerate for 30 to 60 minutes before serving.

4. To serve as a fancy first course, spoon in to tiny parfait glasses or large shot glasses and serve on a decorative salad plate.
