1 lb. ground beef
1/2 onion, chopped
i can tomato sauce
1 can tomatoes with green chilies
1 can retried beans
1 packet taco seasoning
1 bag extra-sharp cheddar cheese
1 package mexican style cornbread mix
salt, cumin, and ground coriander to taste
1. Preheat oven to 400 degrees Fahrenheit. In a large iron skillet, brown hamburger meat together with onion, seasoning to taste. Drain and return to skillet. Add taco seasoning, tomato sauce, and Rotel tomatoes, stirring well. Place refried beans atop mixture by spoonful’s until it is layered evenly. Cover this with cheese.
2. In a mixing bowl, mix cornbread mix with 1 egg and 2/3 cup milk. Stir well and pour on top of the other ingredients in the skillet. Place skillet on a baking sheet and place in oven. Cook about 15-20 minutes until cornbread is browned.
3. Cool five minutes and serve. Serves 4-6.
