1 tablespoon plain flour
2 tablespoons caster sugar
¼ cup dessicated coconut
1 egg, lightly beaten
½ teaspoon vanilla essence
40 grams butter, melted
½ cup milk
1. Preheat oven to 170C. Lightly grease straight sided shallow pie dish (2 cup capacity).
2. Place all ingredients in a small bowl and mix thoroughly until combined. Pour into prepared pie dish and leave to stand for 5 minutes.
3. Cook for 25 minutes, or until lightly browned and set. Serve warm or cold.
