4 to 6 cooking apples (a little lemon juice to keep them from browning)
1/2 cup brown sugar
2 tsp cinnamon
1 tsp vanilla
1 box vanilla cake mix (or golden, white, your choice)
1 box vanilla instant pudding
4 eggs
1 cup milk (can substitute with whatever you like)
1/2 cup oil
1. Preheat oven to 350 F. Grease and flour a 13 x 9 inch pan.
2. Peel and cut up the apples first, and let them sit in a citrus bath of lemon juice and water.
3. Mix the brown sugar, cinnamon and vanilla extract together.
4. Mix the cake mix, vanilla pudding, eggs, milk and 1/2 cup oil. Pour half into prepared 13 x 9-inch pan. Layer in half the apples and half the brown sugar mix, then layer the rest of the cake mix, the rest of the apples and the rest of the brown sugar mix.
5. Bake for 45 - 50 minutes until a toothpick inserted into the center comes out clean.
