1 kg of chicken mince(no chunks at all)
1 big onion
a handful of thymes
1 tsp of garlic powder (fresh also can be use)
1 tsp of onions powder
1 tsp of cayenne or chilli powder
2 tsp of white pepper
2 tsp of baking powder
salt to taste
1 tsp of adinomoto (optional)
3 eggs white
2 tbsp of corn flour mix with 4tbsp of water
eggs for coating
breadcrumbs for coating
1. Blend the onions and thymes together with little bit of water and set aside.
2. Add the chicken mince in a cake mixer, mix for 2 mins on high then add all the spices with the baking powder and salt, mix again for 1 min, then add the onion and thymes mixture, mix again until very well combine. Then add in the egg whites, mix again until very well combine, then add the corn flour mixture and mix again. The consistency should be creamy then set aside.
3. In a big pot add water to boil. When starts to bubbling add the chicken nuggets, add loads of oil on both of your hands and take approximately 1 tbsp of the chicken mixture and shape it into round or your desired shape. Then add them in the boiling water.
4. When it starts to floats then nuggets are ready, remove from water and set aside.
5. Double coat them (very important).
6. Dip in eggs and breadcrumbs then eggs again and then breadcrumbs, fry in a medium heat oil until golden brown and serve.
