Banana/Oatmeal Pancakes

Ingredients:

1 cup dry oatmeal (blended dry to chop up finely)

1 egg

2 tbsp honey

1 smallish very ripe banana

1/2 cup of kefir or a liquid yogurt product

1/4 tsp baking soda

3/4 tsp baking powder

1/4 tsp salt

1/2 tsp vanilla extract

Directions:

  1. 1. Process the dry oatmeal to a medium or fine texture.
  2. 2. Add the remaining ingredients and blend on high for a few seconds until everything is mixed well.
  3. 3. Heat griddle or skillet to 350 or 375 degrees.
  4. 4. Coat cooking surface with spray on oil or butter, pour pancakes just as you would regular flour pancakes, and cook until top is bubbling and edges are starting to look a little dry, turn carefully (this recipe is not as easy to "handle" as flour pancakes) cook on other side until browned, then remove to plate and butter/ serve. These would probably be great with some honey yogurt as a topping.
