Ingredients:
1 cup dry oatmeal (blended dry to chop up finely)
1 egg
2 tbsp honey
1 smallish very ripe banana
1/2 cup of kefir or a liquid yogurt product
1/4 tsp baking soda
3/4 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla extract
Directions:
- 1. Process the dry oatmeal to a medium or fine texture.
- 2. Add the remaining ingredients and blend on high for a few seconds until everything is mixed well.
- 3. Heat griddle or skillet to 350 or 375 degrees.
- 4. Coat cooking surface with spray on oil or butter, pour pancakes just as you would regular flour pancakes, and cook until top is bubbling and edges are starting to look a little dry, turn carefully (this recipe is not as easy to "handle" as flour pancakes) cook on other side until browned, then remove to plate and butter/ serve. These would probably be great with some honey yogurt as a topping.
