1-pound ground beef, (85/15)
1 yellow onion, chopped
1 can ranch style beans or chilli beans
1 cup red enchilada sauce
1 cup tomato sauce
2 cups sharp cheddar cheese, shredded (or cheese of choice)
2 green onions, thinly sliced (optional)
6 brioche buns
2 cups fritos corn chips
additional toppings of choice
1. Cook the ground beef and onions over medium heat, breaking it into crumbles, until onions are caramelized, about 5-6 minutes.
2. Add tomato sauce, enchilada sauce, and beans. Cook until sauce reduces slightly and mixture is "sloppy" (this should take another 5-6 minutes).
3. Top brioche bun with beef mixture, then cheddar cheese and Frito chips. Add green onions and other toppings like sour cream or diced tomatoes.
