4 lrg sweet potatoes, peeled, cut in large cubes
2 med. apples,
1/2+ cups light brown sugar
1 tsp cinnamon
1/2 tsp nutmeg
3+ tbl unsalted butter
1/2 tsp maple extract
1/2 tbl lemon juice
water + a dash of cinnamon for boiling pot
1. 350° oven.
2. In a deep pot, add enough water and a dash of cinnamon to cover potato cubes. Bring to a boil and boil approx. 15-20 minutes. Potatoes should be soft but not mushy.
3. Add sliced apples to a small skillet with some butter, extract and lemon juice. Gently simmer on low about ten minutes until apples soften.
4. Remove half of the boiled potatoes to a mixing bowl and using a masher, mash, add butter, brown sugar and spices and blend well. Add soft apples and blend again.
5. Lightly spray a 7 x 11 baking dish. Spoon mashed sweet potatoes and apple into dish and spread evenly. Place reserved sweet potato cubes on top and gently press into mashed sweet potatoes/apples. Lightly sprinkle with some brown sugar and some nutmeg. Cover tight and bake about thirty minutes.
6. Approx. 8 servings.
