Ingredients:
1 head cauliflower
1 onion
1-liter (33 oz) vegetable stock
2 cloves garlic
water
300 mls (10 oz) cream
salt & pepper to taste
parmesan cheese
Directions:
- 1. Finely slice Cauliflower including stalks. Finely dice Onion & Garlic. Add to pan with Vegetable stock and enough water to cover ingredients.
- 2. Bring to the boil then simmer for 20 - 30 minutes (until Vegetables are very soft).
- 3. Remove from heat and blitz with a wand or blender. Season to taste. Return to the pan and warm slowly. Add cream, mix through and serve.
- 4. Parmesan chips. Line baking tray with Parchment Paper. Grate Parmesan Cheese. Arrange on paper in piles. Bake at 200C/425F until Golden Brown. Remove from oven and off paper and allow to harden. Can be used whole or crumbled into soup.
