Creamy Cauliflower Soup

Ingredients:

1 head cauliflower

1 onion

1-liter (33 oz) vegetable stock

2 cloves garlic

water

300 mls (10 oz) cream

salt & pepper to taste

parmesan cheese

Directions:

  1. 1. Finely slice Cauliflower including stalks. Finely dice Onion & Garlic. Add to pan with Vegetable stock and enough water to cover ingredients.
  2. 2. Bring to the boil then simmer for 20 - 30 minutes (until Vegetables are very soft).
  3. 3. Remove from heat and blitz with a wand or blender. Season to taste. Return to the pan and warm slowly. Add cream, mix through and serve.
  4. 4. Parmesan chips. Line baking tray with Parchment Paper. Grate Parmesan Cheese. Arrange on paper in piles. Bake at 200C/425F until Golden Brown. Remove from oven and off paper and allow to harden. Can be used whole or crumbled into soup.
