Ingredients:
1 large cucumber
1/3 c. sliced onions
1 clove garlic, minced
1 1/2 t. red wine vinegar
good pinch of dried dill weed
1/2 to 1 tsp. red pepper flakes (depends on your taste)
1/2 tsp. dried cilantro or parsley
salt and pepper to taste
Directions:
- 1. Slice the cucumber in half and then slice each half lengthwise and chop. Place the chopped cucumber in a bowl and add the remaining ingredients. Stir well to combine, cover and place in the fridge for 1 hour prior to serving.
