Ingredients:
4 tablespoons butter
1 carrot - finely chopped
1 onion - finely chopped
2 stalks celery - finely chopped
3 cloves Garlic - finely chopped
5 med. potatoes diced
water
3/4 cup sour cream
salt, pepper, and red pepper flakes to taste.
Directions:
- 1. Saute Carrots, Onions, Celery, and Garlic in Butter until clear. Add salt, pepper, and red pepper to taste.
- 2. Add Potatoes and stir for 1 minute. Add just enough water to cover potatoes.
- 3. Boil until they are soft.
- 4. Remove from heat. Mash them with a potato masher or put some of the soup in a food processor.
- 5. Add it back to the pan and stir in the sour cream.
