400 g almond flour
75 g stevia
1 tsp. baking powder
1 egg, beaten
75ml olive oil
25 g melted butter
2 tsp. vanilla essence
50 g dried cranberries
50 g chopped walnuts
1. Preheat oven to Gas Mark 4 or 180°C. Line a baking tray with greaseproof paper. Whisk the almond flour, Stevia, baking powder, egg, olive oil, butter, and vanilla essence together in a large bowl.
2. Mix the chopped walnuts and cranberries into the flour mixture. Make 1 inch balls with your hands and place onto the baking tray. Flatten the balls with your palm and bake for 10 minutes until brown. Cool for 10 minutes on the baking tray and then place onto a cooling tray. Enjoy with a hot cup of tea or coffee or a cold glass of milk!
