2 1/2 lbs baby back ribs
1 large white onion, small diced
1 cup Sweet barbecue sauce
1 tbsp dry Pork rub (optional but recommended)
1 tablespoon cumin
1 tablespoon paprika
1 tablespoon granulated garlic
1 tablespoon granulated onion
1 tablespoon chili powder
1 tablespoon brown sugar
2 tablespoons kosher salt
1 teaspoon cayenne pepper
1 teaspoon black pepper
1 teaspoon white pepper
1 tsp minced garlic
1. Combine all ingredients in a large bowl and mix well. Store in an airtight container. Pack on the dry rub onto your next rack of ribs.
2. Using a sharp knife, slice rack of ribs in half so you have two small racks. Generously sprinkle and rub the Stubb’s dry pork rub all over ribs. If you don’t use the dry rub, rub your ribs down with a tsp of salt and pepper.
3. Place both racks at the bottom of your Crock Pot.
4. Place diced onions on top of ribs in the pot, followed by minced garlic. Finally, pour barbecue sauce over everything.
5. Place lid on Crock Pot and turn heat to low. Cook for 7 hours—meat should be definitely falling off the bone at this point!
6. Time: 7 hours and 15 minutes.
