2 lbs lean ground beef
1/2 tbl garlic powder
2 tsp chili powder
1-14.5oz. can fire roasted diced tomatoes, drained
1/2 med. red onion, diced
1/2 green bell pepper or jalapeño, diced
2 pkg taco seasoning, any brand
1½ cups beef broth
approx. ½ bag, party size, tostitos round chips, divided
1-16 oz. can re-fried beans
1 jar ragu double cheddar cheese sauce
4 cups shredded mozzarella cheese, divided
1/2 cup sliced black olives, divided
several pinches fresh cilantro, chopped for topping
1. Preheat oven 400.
2. In a cast iron skillet, crumble and brown ground beef with onion, green pepper and seasoning. Add canned tomatoes, taco seasoning and broth. Blend well. Cover and let simmer on low about fifteen minutes.
3. In a deep, oven safe dish, slightly crush with the palm of your hand a couple cups of round chips to cover bottom of dish.
4. Sprinkle some meat mixture over the top of chips. Sprinkle some shredded Mozzarella on top. Scoop some re-fried beans using a teaspoon over the top evenly. Sprinkle some black olives. Drizzle some Ragu Cheese Sauce over. Repeat process using remaining ingredients including juice from meat skillet evenly. Make shredded Mozzarella and some black olives the top ingredients. Top with some fresh cilantro.
5. Bake covered with heavy duty foil about forty-five minutes. Serves 6-8.
