3-4 medium to large yellow squash cut up into large chunks about 1/2 to 3/4 inch
1 medium onion, diced
fajita seasoning
cheddar cheese
1 tbsp butter
a little half-and-half (approx. 2-4 tablespoons)
1. Cut the squash up and place in microwaveable dish. Add the diced onion.
2. Sprinkle generously with fajita seasoning. Place the cheese on top.
3. Run a little water into the dish in order to "steam" the mix. Place in microwave and cook on high setting for 6 minutes.
4. Remove from microwave and pour the half-and-half into the dish, then stir everything together. Place back in microwave for two more minutes on high setting, remove and serve.
