Mushroom Chicken and Sausage Casserole

Ingredients:

3-4 cups cooked chicken diced

1 pound sausage either ground or cut into chunks

2 stalks celery chopped fine

3/4 cup onion chopped

2 cups mushrooms chopped

1 medium red pepper chopped

8 ounces cream cheese softened

1 large cauliflower cooked well and drained

8 ounces cheddar cheese shredded

1/2 tsp salt and pepper

1 tsp onion powder

1 tsp garlic powder

Directions:

1. Brown the sausage with the celery, red pepper, onion and mushrooms.

2. Stir the softened cream cheese into the sausage mixture until well blended.

3. Coarsely chop the cooked cauliflower. Mix all of the remaining ingredients in.

4. Spread in a greased 9x13" baking dish. Bake at 350º for about 30 minutes.

5. Remove from oven and top with cheese and place back in oven for 10 minutes to finish cooking.
