Ingredients:

2 lbs. fresh yellow squash

1 small onion

1/3 stick of butter

1/2 c. milk

1/2 1 tsp. salt (to taste)

1/2 c. bread crumbs

1 1/4 c. grated cheddar cheese

Directions:

1. Cut up the squash and chop the onion, place in a pot of water and bring to a boil, cooking until softened.

2. Drain well and add the butter. Use an immersion blender, mixer or food processor to whip/mash the squash, onions and butter. To this add the milk, salt and 1 C. of cheese, stir to combine. Pour into a 2 quart baking dish, top with the bread crumbs and remaining cheese.

3. Bake in a 400 degree oven for 30 minutes.
