box of vanilla wafer cookies (keep a handful to use on top) (crust)
1/3 cup of butter melted (crust)
1 box of instant vanilla pudding
1 cup of milk
1 teaspoon of vanilla
1/2 cup of frozen whipped cream
sliced bananas
2 plastic baggies or frosting bags with tips
1. Creating Mini Pie Crust. Preheat your oven to 350 degrees.
2. In a food processor pulse your vanilla wafer cookies until only crumbs remain.
3. In a medium size bowl add your vanilla wafer cookie crumbs and your melted butter. Mix and until all ingredients are combined.
4. Spray your mini cupcake pan. Using a spoon add your crumbs to each cupcake space, making sure that you are pressing firmly and creating a pie shape. Make sure to press down in the middle to create a deep space for your filling.
5. Bake for about 10 minutes or until edges are golden brown. Allow your mini pie crusts to cool off completely before adding filling.
6. Creating Banana Pie Filling. In a mixer add your instant vanilla pudding powder, 1 cup of milk, and 1 teaspoon of vanilla. Mix until nice and fluffy. Add 1/2 a cup of the frozen whipped cream and fold into the pudding mix. This will create a nice and fluffy pudding recipe.
7. Creating Mini Banana Cream Pie. Add filling to crust. Add a sliced banana. Pipe frozen whipped cream. Top with a vanilla wafer cookie. Refrigerate until serving.
