Vanilla Cake in Pressure Cooker

Ingredients:

1 cup all purpose flour

1 cup sugar

4 eggs

1.5 teaspoon baking powder

1 teaspoon vanilla essence

1/4 cup oil

Directions:

1. In a mixer, thoroughly blend eggs and sugar together till sugar dissolves completely. It may take 20 minutes. Now in a bowl, sift flour and add the egg mixture to it. Mix it well. Add vanilla extract and oil to it.

2. Put a layer of around 1 inch of sand into a pressure cooker and heat it with closed lid without gasket and whistle for 10 minutes. Grease a thick aluminium pan/patila with oil.

3. Add baking powder to the cake batter and mix properly. Immediately pour the batter into the pan and place inside the pre-heated cooker.

4. Close the lid without Gasket and whistle and cook for 50 min. Check by inserting tooth pick at the centre of cake. Serve with icing.
