2 1/2 cups all purpose flour
1 cup stick margarine, softened
1 1/4 cup cup white sugar
3/4 cup brown sugar
2 eggs
1 teaspoon baking soda
1 cup chopped or halved macadamia nuts
8 ounces white chocolate chips
2 teaspoons vanilla extract
1/2 teaspoon salt
1. Preheat the oven to 350 degrees Fahrenheit. Lightly grease cookie sheets, or line them with parchment paper.
2. In a large mixing bowl, mix together the margarine, both of the two sugars, the vanilla and the salt. Use an electric mixer, or beat thoroughly by hand until the mixture is smooth. Add the eggs, and beat the mixture thoroughly.
3. In another bowl, sift together the flour and the baking soda. Add the dry mixture to the butter mixture in small batches, beating the whole time.
4. Last, stir in the macadamia nuts and the white chocolate chips or chunks. Use a spoon to drop the batter onto the cookie sheet. Leave enough space around each cookie to allow for some expansion so that the cookies do not meld together in the baking process.
5. Bake for eight to 10 minutes.
