1 pkg. devil's food cake mix
3 eggs
1 1/3 c. orange juice
1 tbsp. grated orange zest
1 1/2 c. butter (softened) (frosting)
2 tbsp. orange juice (frosting)
1 tbsp. grated orange zest (frosting)
4 c. icing sugar (frosting)
2 egg yolks (frosting)
1. Mix all cake ingredients on med. for 2 mins. Pour cake batter into cupcake pan. Cook for approx. 18-21 mins. or until fork comes out clean. Cool in pans for 15 min. thank place on wire rack to cool completely. With a sharp knife cut across middle to you have 2 halves.
2. Frosting/filling - beat butter, orange juice, and zest on med. speed until creamy. Gradually add icing sugar and egg yolks. Beat until smooth and fluffy. Spread onto the bottom half of the cupcake crown it with top half of cup cake and ice the top. Add a bit of decoration: like grated chocolate bar or choc. Curls or even fresh sm. mandarin orange slices (if using the fresh orange don't put it on until you serve it). Chill until serving.
