3/4 cup rolled oats
1 cup whole-wheat flour
1 tsp cinnamon
1 tsp bicarbonate of soda
1/2 cup brown sugar
2 free range eggs
1/3 cup milk
1/4 cup canola oil or any vegetable oil
1 cup grated apple
1. Preheat oven to 180C and line a muffin pan with paper cases.
2. Mix dry ingredients together in a small bowl.
3. In a separate bowl , beat eggs, milk and oil together.
4. Add egg mixture to dry mixture until combined then add apple.
5. Spoon batter into muffin pan and bake 25 minutes or until toothpick inserted into the center of muffin comes out clean.
6. Cool before removing muffins from tin.
