6 strips bacon, cut into 1/2" strips
1/2 c. chopped onion
8 oz. shredded sharp cheddar cheese
2 c. milk
2 c. water
1 c. plus 2 tbs. quick cooking grits
4 tbs. butter
2 eggs
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
1. Cook the cut up bacon in a skillet over medium heat, when it begins to brown, add in the onions and cook till tender.
2. Drain and set aside.
3. Bring the milk and water to a low boil, whisk in the grits and butter.
4. Cover and whisk often so they do not stick.
5. Once the grits have thickened, about 5-6 minutes later, remove from heat.
6. Beat the eggs in a small bowl and temper them with a couple of spoonful's of the grits.
7. Add eggs to grits and stir well, add in the bacon/onions, 1/2 of the cheese and seasonings.
8. Baked in a lightly greased 9x13 pan at 350 degrees for approx. 30-40 minutes or until set.
9. Remove during the last 5 minutes of cooking and top with remaining cheese, return to oven to melt. 10. Let sit 10 minutes before cutting.
